Waco is in an interesting predicament. It's not a major tourist destination city, so the need for hotels isn't all that great. Except during football season. More than once, I've had to stay at a hotel in Temple or Belton because every hotel in Waco is booked. That's usually when I decide last minute to hit a game. Waco could use a couple of more nice hotels, but need to be careful not to overbuild. I'm not talking about Motel 6 or Super 8, but more along the lines of Holiday Inn Express or Residence Inn (my personal favorite). The nicer boutique hotels are fine because they tend to be smaller, and are favorites of upper class people and usually don't have a problem with lack of customers.

There has been a rumor for YEARS that once this hotel was built that a Pappadeaux's might be built. If that happens on the river it would be sweet.

Landry's maybe. Doubtful Pappadeaux's. That company clusters thier restaurants due to the way they operate with their purveyors and services.

I would love anything to be on the river there, hopefully it starts a trend on that side of the brazos

Landry's would be a good choice, as they like projects. They wanted to make some sort of pier in Corpus Christi. They operate the Tower of Americas in SA among many other things. They would be able to create something more than a restaurant. Waco should be all over them.
